Ginger Chicken Wrap

What’s for dinner?

Yeah, I didn’t feel like cooking tonight either.  After fighting with myself to get into the workout clothes, I had to have a long conversation to motivate myself to actually make use of them by working out.  By the time that ordeal was over it was already almost 7 – practically midnight by my dinner standards.  So I needed something that was going to come together quickly.

Thankfully, I’ve got all the ingredients for a nice ginger chicken wrap on hand.


To put together this tangy treat, I pull some ginger soy chicken I grilled this weekend, sliced napa cabbage, chopped peanuts, sliced scallions and to top it off, Newman’s Own Sesame Ginger dressing (Lite!  And there was a coupon for it this week!)  

Grab a wrap, layer on the cabbage, chicken, scallions and peanuts then drizzle on the dressing. 

Roll it up, slice in half and enjoy.  It’s good with the chicken warm or cold.

And best of all, it’s ready in minutes.



Pear, Brie & Toasted Walnut Sandwich

One of the things I love about traveling are the delicious food memories.  I just have to take one bite of this sandwich to be transported back to the beach cafe in Barcelona watching the sun set.  Thankfully this pear, brie and toasted walnut sandwich is a lot cheaper than a plane ticket and assembled in five minutes!

As with all the best things in life, the ingredients to this tasty treat are super simple


  • French Baguette
  • 1/2 oz. Brie
  • 2 T Toasted Walnuts
  • 1/2 Pear
  • 1 t Agave or Honey
Start assembling with a sliced layer of brie topped with pear.
Drizzle with agave so the walnuts will stick and then sprinkle walnuts generously over the sandwich.
Put the “lid” on that sandwich and pour yourself a glass of sangria.  If you need inspiration, I happen to like Bobby Flay’s passion fruit sangria.
